Apple Storage: How to Keep Fruit Fresh and Profitable with Modern Technology
Apple farming is changing. Traditional orchards with large trees are giving way to high-density plantations — smaller trees planted thousands per hectare. These compact trees bear fruit earlier but require precise management to ensure both yield and quality.
Whether grown in India, Africa, or the Gulf region, apples face similar post-harvest challenges: heat, transport distance, and storage stability. To maintain high quality from harvest to market, each step - from picking to cooling — must be carefully optimized.
1. The Right Harvest Time
Harvest timing determines the quality and storability of apples.

Too early: fruit remains small, hard, green, and acidic - easily affected by storage diseases.

Too late: fruit softens quickly, becomes prone to rot, and loses market value.
Ideally, apples for long-term storage should be harvested just before full ripeness. At this point, natural processes such as respiration and ethylene production are balanced — starch converts to sugar, acidity decreases, and aroma compounds form. Picking at this stage ensures the fruit stays firm and flavorful during storage.
2. Pre-Cooling After Harvest
Pre-cooling is the rapid reduction of fruit temperature immediately after harvest.
While not always essential, it’s strongly recommended in warm climates or when storage facilities are far from the orchards.
By cooling apples quickly, you slow down respiration, preserve firmness, and reduce the risk of early spoilage. For large farms or export operations, mobile or on-site pre-cooling systems can make a measurable difference in product quality and shelf life.
3. Proper Packing
Apples are typically stored in stackable crates — about 350 kg each — made of either plastic or wood. Plastic crates are preferred because they don’t absorb water, resist mold, and are easier to clean and disinfect between seasons.
Uniform crate stacking also supports even air circulation, preventing temperature variations that could lead to condensation and decay.
4. Refrigerated and Controlled-Atmosphere (CA) Storage
Once cooled, apples are usually stored at 0 – 5 °C and 90 – 95% relative humidity. This keeps fruit firm, juicy, and visually appealing.
However, for long-term storage and export logistics, Controlled-Atmosphere (CA) storage offers a major advantage.
What Is CA Storage?
CA storage maintains precise levels of oxygen, carbon dioxide, nitrogen, humidity, and temperature — slowing the fruit’s breathing and delaying ripening.
In a CA chamber, oxygen levels are reduced to around 2%, while CO₂ and humidity are carefully balanced. This environment significantly slows metabolic activity, extends storage life, and maintains fruit firmness, sweetness, and aroma.
Because gases shift naturally as fruit “breathes,” modern CA systems automatically monitor and adjust conditions to maintain ideal balance for each variety.

Even ancient farmers in Egypt and the Middle East sealed their produce in underground or limestone chambers to extend freshness.
In the early 20th century, researchers at Cornell University (USA) refined this principle — creating the first scientific CA storage system for apples. Today, this technology is used worldwide to preserve fruit quality in varying climates, from Europe to Africa and Asia.
